Clover Tea

INGREDIENTS:

2 large handfuls clover flowers

1 pot water

1 spoonful honey

1/2 lemon (optional)

DIRECTIONS:

1) Collect and wash your clover flowers. Break off the stems and spread the flowers out on a paper towel by a window and let them dry for a day or 2. 

2) When the flowers are dry, stuff them into 1 or 2 tea steepers (as much as you can) and add them to a pot of hot water. Alternatively, you could put the flowers in a small cloth bag or tie them up in a piece of thin cloth before adding them to the water.

3) Let the flowers soak in the water for at least an hour or up to 4 hours. The tea should be a light yellow color. 

4) When the tea is steeped you can add the honey and lemon. Make sure the tea is still warm, or reheat it slightly before doing this. Serve warm or chill in the fridge and serve over ice.

 

SUBSTITUTION IDEAS:

Honey —> Sugar, maple syrup, agave (you also don’t have to sweeten this recipe at all)
