Sweet Potato Hash

INGREDIENTS:

1 sweet potato

1 can black beans

1 zucchini

1 glass frozen corn

5 shakes salt

4 shakes turmeric

5 shakes paprika

3 shakes chili powder

3 shakes garlic powder

5 shakes dried onion

3 shakes thyme

1 splash olive oil

DIRECTIONS:

1) Preheat the oven to 425. Peel the sweet potato and dice it along with the zucchini.

2) Mix the sweet potato and zucchini in a bowl with a few splashes of olive oil, the salt, paprika, chili powder, dried onion, thyme and garlic powder.

3) Put everything on a baking tray and roast for 30 minutes or until browned, flipping often.

4) Drain the black beans and lightly mash them with the turmeric. Defrost the frozen corn and add it to the beans. When the potato and zucchini are done add them to the bowl and give everything a good mix. Serve with tortilla chips or in a torilla if desired.

 

SUBSTITUTION IDEAS:

Sweet Potato —> Russet potato

Seasonings —> Salt, garlic powder and turmeric are the most crucial, but feel free to experiment with others
