Veggie Frittata

INGREDIENTS:

7 eggs

1/2 glass milk

1 glass cherry tomatoes

1 glass grated cheddar cheese

1 zucchini

1/2 red onion

1 handful spinach

3 cloves garlic

1/2 spoonful salt

1/2 spoonful pepper

1 splash olive oil

DIRECTIONS:

1) Preheat oven to 400. Beat the eggs, milk, salt and pepper together in a bowl.

2) Thinly slice the zucchini and red onion and saute it in a pan with some olive oil. Crush the garlic and add it to the pan along with the spinach. Cook until everything is soft.

3) Grease a baking dish, cut the cherry tomatoes in 1/2 and add them to the baking dish along with the sauteed veggies. Pour in the egg mixture and top with the grated cheese. Bake for 10 minutes, or until a toothpick comes out clean when inserted in the middle of the frittata.

Red Onion —> White onion
