Sweet Roasted Carrots
INGREDIENTS:
5 large carrots
3 spoonfuls olive oil
2 spoonfuls honey
1/2 spoonful paprika
1/2 spoonful dried sage
1/2 spoonful dried thyme
1/2 spoonful salt
1/2 spoonful pepper
DIRECTIONS:
1) Preheat the oven to 425. Peel the carrots and cut them in 1/2 widthwise and then in 1/2 lengthwise. The top 1/2 of the carrots may need to be cut in 1/2 lengthwise again.
2) Toss the cut carrots in the olive oil, honey, and spices on a baking sheet. Make sure each carrot is completely coated.
3) Bake the carrots for 12 minutes then flip them and cook for an additional 12 minutes. Remove the carrots from the oven when they can easily be punctured by a fork and are caramelized and brown.
SUBSTITUTION IDEAS:
Carrots —> Sweet potatoes (cook for longer)
Honey —> Maple syrup or agave
Paprika —> Chili powder (more heat)
Sage, thyme —> Oregano, Rosemary (may be more likely to have these)
