Scrap Fritters with Maple Sriracha Sauce
INGREDIENTS:
2 glasses frozen corn
1 small zucchini
1 glass shredded cabbage
1 glass flour
2/3 glass milk
1 spoonful sugar
1/2 spoonful baking powder
3 green onions
2 eggs
5 shakes garlic powder
4 shakes chili powder
3 shakes turmeric
few shakes salt & pepper
3 spoonfuls mayonnaise
1 spoonful sriracha
1 spoonful maple syrup
olive oil
DIRECTIONS:
1) Defrost the corn and place it in a large bowl. Shred the zucchini, squeezing the excess water out in a paper towel. Add to the bowl with the corn, along with the shredded cabbage.
2) In a separate bowl beat together the milk and eggs. Add the seasonings and sugar and continue to beat. Then, gradually add in the flour and baking powder. Give everything a loose stir. Chop the green onions (saving some for the sauce) and add them to the batter.
3) Combine the batter with the vegetables and stir until just combined. Heat some olive oil in a pan on the stove and place large spoonfuls of the batter into the pan. Cook until the fritters are golden and crispy on each side.
4) For the sauce combine the mayonnaise, sriracha, maple syrup and remaining green onions in a small dish.
