Veggie Noodle Soup

INGREDIENTS:

2 blocks ramen noodles

3 glasses veggie broth

1 head baby bok choy

2 spoonfuls soy sauce

1 spoonful sesame oil

1 spoonful nut butter

1 spoonful sriracha

1 clove garlic

DIRECTIONS:

1) Heat the veggie broth, soy sauce, sesame oil, nut butter, and sriracha in a pot on the stove and whisk until everything is combined.

2) Crush the garlic clove and add it to the pot. Chop the bok choy into thin slices while the broth comes to a boil.

3) Add the bok choy to and noodles to the pot and cook until the noodles are done.

 

SUBSTITUTION IDEAS:

Ramen noodles —> Leftover spaghetti, rice noodles, udon noodles

Veggie broth —> Chicken broth

Optional —> Add chicken or tofu to bulk up the soup
