Crispy Chicken Salad

INGREDIENTS:

4 large handfuls cabbage (shredded)

4 large handfuls kale (shredded)

3 green onions

3 carrots or 10 baby carrots

2 spoonfuls sesame seeds

4 breaded chicken tenders

4 spoonfuls red wine vinegar

3 spoonfuls olive oil

1 spoonful honey

6 shakes salt

4 shakes chili flakes

1 lime

DIRECTIONS:

1) Prepare the chicken tenders according to the instructions on the package. Once prepared, set aside to cool.

2) Shred the cabbage and kale and add it to a large bowl. Add the olive oil and massage the greens for a minute or two. Slice the carrots, green onions and chicken tenders and add them to the bowl as well.

3) Microwave the honey for a few seconds in a small dish. Combine the honey with the spices, sesame seeds, vinegar and the juice from the lime. Give everything a good mix, then add it to the large bowl and toss.

 

SUBSTITUTION IDEAS:

Honey —> Agave, maple syrup

Kale —> Romaine
